I made cheese enchiladas last night.
The Tex-Mex variety.
Originally, I was going to post my recipe
for them. But then I got lazy. Not to
mention the fact that my recipes tend to
get a little on the anal-retentive side.
Going to a restaurant to get enchiladas
is sort of expensive, so I started making
HINT: I use enchilada sauce from a can,
but I've learned that if you add a good
ratio of your favorite salsa to the sauce
they taste one hell of a lot better.
